Green tea comes in many different forms
A mild form of green tea sencha (infused tea) that is grown under shade rather than in the sun, it contains less caffeine and is less bitter than other varieties. The name in Japanese (玉 露) means "jade dew," which is derived from its clear green colour.
Matcha (抹茶) is processed and finely ground tea leaves (usually high-grade) and is distinctive from sencha because rather than being infused with a drink it is mixed in with the drink itself.
Matcha is sold under different tiers of quality ranging from ceremonial grade to premium grade and culinary grade. Ceremonial grade matcha has more umami, however is otherwise mostly indistinguishable from premium grade matcha.
Premium grade matcha is processed using tea leaves from the top of the tea plant and has much more nutritional value than culinary grade tea. If you're looking for a delicious, healthy drink full of nutrients it is best to use ceremonial or premium grade matcha.
Culinary grade matcha has less nutrients but is more affordable than other types of matcha. Just be careful not to purchase a matcha with added sugar as most culinary brands are more heavily processed.
Hōjicha (ほうじ茶) is a type of green tea that is roasted in a porcelain pot over charcoals. It has a slight caramel flavour and contains less catechins, caffeine, and nutrients than other forms of tea.
Genmaicha (玄米茶) is a green tea mixed with roasted brown rice. It has a nutty flavour, a clear brown colour when brewed, and has traditionally been used by religious fasters for sustenance.
